It’s a daily grind to come up with a menu every day, not only for dinner, but for lunch too. Yes you can have the same thing every day, most of us are creatures of habit, but that becomes boring real quick. And not only boring, eating the same thing doesn’t provide your body with the essential nutrients that a variety of foods provides. God made lots of different foods for a reason.
Every food growing on this earth has a different nutrient profile (they each have their own vitamin and mineral content). Your body needs the vitamins and minerals in food to run smoothly. When you aren’t getting the vitamins and minerals you need to run your body smoothly, you start having symptoms.
Eating the same thing every day is easy and many of us do it, but it isn’t how your body is designed to take in food. Lets say you are eating nothing but real food, coming from this earth, with lots of veggies and fruits in each meal, but it’s always the same thing. The nutrients (vitamins and minerals) you’re taking in won’t be varied enough to provide everything you need. You’ll start developing deficiencies and then symptoms. So…

Easy and Energizing Lunch Ideas
Because I’m a dietitian at heart, improving my client’s diet with a holistic diet plan is usually the first place I start. Like I said earlier, meal planning is a grind for most of us. Supper can be challenging but usually it’s the breakfast and lunch that is the toughest to get variety because of the lack of time for preparation.
Here are my favorite easy and energizing lunches for busy working women.
Meal Bowls
Ooh I’m definitely a fan of a meal bowl. Meal bowls provide the vitamins and minerals needed to replenish your body, they are filling with plenty of veggies, protein and complex carbs, and they are delicious! Meal bowls can be super easy because you can use leftovers from suppers. The key is to get enough variety by changing your ingredients with each bowl.
Smoothie
You can catch me having a smoothie most days. Smoothies are super convenient. Not only can you load a smoothie with lots of fruit, but there are a wide variety of vegetables that can easily go into a smoothie without making the flavor too veggie tasting. The key is to get enough protein to be able to use a smoothie as a meal.
Bento Box
If you grew up in the 80’s or sooner, you’re in the Lunchable generation and you know how to put together a bento box. You may also know a bento box by it’s boujee name…charcuterie board. These are easy meals to throw together using ingredients you probably have on hand in your fridge or pantry. The key is to stock your pantry well and to read ingredients for healthier versions of the processed foods that usually come in a Lunchable.
